Broccoli Slaw with Cashew Dressing
Slaw
2 heads of broccoli florets
1 carrot
1/8 small red cabbage
2/3 cup of finely sliced shallots
¾ cups of cranberries
1 cup of pecans
¼ cup of pepitas
¼ cup of sunflower seeds
Method:
Add broccoli, carrot and cabbage to a food processor and pulse into manageable chunks. 
Add remaining ingredients into a bowl and mix with probiotic cashew dressing.
Probiotic Cashew Dressing
1 cup of cashews
½ cup of apple cider vinegar (with the mother)
1 tablespoon of stevia
Salt and pepper
½ cup olive oil
Method:
Add all ingredients and blend on high until smooth in either a blender or food processor.
